- 2.On a large baking sheet, combine the cubed potatoes and chicken. Drizzle with about two-thirds of the marinade and toss well to ensure everything is evenly coated.
- 3.Spread the chicken and potatoes in a single layer and roast for 20 minutes. The potatoes should start to become tender.
- 4.Remove the pan from the oven, add the green pepper chunks, and drizzle with the remaining marinade. Toss everything together on the pan.
- 5.Return the pan to the oven and roast for another 10-15 minutes, or until the chicken is cooked through and the potatoes are golden and crisp. Serve immediately.
