- 200g hummus
- 1 lemon
- 1 clove garlic, minced
- 30ml olive oil
- 2 tablespoons fresh parsley, chopped
- Pinch of salt

- 1.Pat the trout fillets dry with a paper towel and season lightly with a pinch of salt and black pepper.
- 2.In a small saucepan, gently warm the hummus over low heat. Stir in the minced garlic, juice of half a lemon, and chopped parsley. Keep warm, but do not boil.
- 3.Heat 15ml of olive oil in a non-stick skillet over medium-high heat. Place the trout fillets skin-side down and sear for 3-4 minutes until the skin is crispy.
- 4.Flip the fillets and cook for another 2-3 minutes until the fish is cooked through and flakes easily with a fork.
- 5.To serve, spread the warm lemon-herb hummus onto two plates. Place a seared trout fillet on top of the hummus and drizzle with the remaining olive oil.
