- 1 chicken drumstick
- 1/2 cup basmati rice
- 1 teaspoon olive oil
- 1 garlic clove, minced
- 1/4 onion, finely chopped
- 1/2 lemon, juiced
- 1/2 teaspoon dried oregano

Instructions
- 1.Preheat the oven to 400°F (200°C).
- 2.Season the chicken drumstick with salt, pepper, oregano, lemon juice, and a drizzle of olive oil.
- 3.Place the chicken on a baking sheet and roast for 35–40 minutes until golden and fully cooked, turning halfway.
- 4.While the chicken bakes, rinse the basmati rice until the water runs clear.
- 5.In a small pot, sauté onion and garlic in 1/2 teaspoon olive oil until fragrant.
- 6.Add the rice and 1 cup water, bring to a boil, then cover and reduce heat to low. Cook for 12–15 minutes until the rice is tender.
