- 1.Cook the 225g of white rice according to package instructions. This usually involves rinsing the rice and simmering it in 450ml of water for about 15-20 minutes until the water is absorbed.
- 2.While the rice is cooking, place the chicken pieces in a bowl. Add half the olive oil (5ml), half the lemon juice (15ml), the minced garlic, dried oregano, salt, and pepper. Toss well to coat the chicken.
- 3.Heat the remaining 5ml of olive oil in a large skillet or pan over medium-high heat. Add the marinated chicken and cook for 6-8 minutes, stirring occasionally, until golden brown and cooked through.
- 4.In a large serving bowl, combine the cooked rice with the diced cucumber and finely chopped onion. Gently stir to mix.
- 5.Add the cooked chicken and the diced avocado to the rice mixture. Drizzle with the remaining 15ml of lemon juice and gently toss everything together.
