Ingredients
- 500g lamb shoulder, diced
- 2 tablespoons olive oil
- 1 large onion, chopped
- 2 carrots, diced
- 2 celery stalks, diced
- 4 cloves garlic, minced
- 1 teaspoon ground cumin
- 1 teaspoon ground coriander
- 1/2 teaspoon ground turmeric
- 1/4 teaspoon ground cinnamon
- 200g brown or green lentils, rinsed
- 1 liter vegetable broth
- Salt and freshly ground black pepper to taste
- Juice of 1/2 lemon
- Handful of fresh parsley, chopped
Instructions
- 1.Pat the lamb dry and season with salt and pepper. Heat olive oil in a large pot or Dutch oven over medium-high heat. Brown the lamb in batches, then remove and set aside.
- 2.Reduce heat to medium. Add the chopped onion, carrots, and celery to the pot, sautéing for 7-8 minutes until softened and lightly golden.
- 3.Stir in the minced garlic, cumin, coriander, and turmeric. Cook for 1 minute until the spices are very fragrant.
- 4.Return the browned lamb to the pot. Add the rinsed lentils and pour in the vegetable broth. Stir to combine and scrape any browned bits from the bottom of the pot.
- 5.Bring the stew to a boil, then reduce the heat to a low simmer. Cover and cook for 45-50 minutes, or until the lamb is tender and the lentils are fully cooked.
- 6.Remove from heat and stir in the fresh lemon juice. Season with additional salt and pepper to your liking. Serve hot, garnished with fresh parsley. This stew is excellent for meal prep as flavors deepen over time.
