Ingredients
- 2 large lamb loin chops (approx. 300g total), fat trimmed
- 2 medium carrots (approx. 200g), peeled and cut into batons
- 2 medium parsnips (approx. 200g), peeled and cut into batons
- 20ml extra virgin olive oil, divided
- 1 garlic clove, minced
- 75g pomegranate seeds
- 15g fresh mint leaves, finely chopped
- 15g fresh flat-leaf parsley, finely chopped
- Zest and juice of 1 lemon
- Salt and freshly ground black pepper to taste
Instructions
- 1.Preheat your oven to 200°C. On a baking tray, toss the carrot and parsnip batons with 10ml of olive oil, salt, and pepper. Roast for 20-25 minutes until tender and lightly caramelized.
- 2.While the vegetables are roasting, prepare the gremolata. In a small bowl, combine the pomegranate seeds, chopped mint, parsley, lemon zest, lemon juice, and the remaining 10ml of olive oil. Mix gently and set aside.
- 3.Pat the lamb chops dry and season both sides generously with salt, pepper, and the minced garlic.
- 4.Heat a heavy-bottomed skillet over medium-high heat. Carefully place the lamb chops in the hot pan and sear for 3-4 minutes per side for a medium-rare finish, adjusting time for your preferred doneness.
- 5.Remove the lamb from the skillet and let it rest on a cutting board for 5 minutes. This allows the juices to redistribute, ensuring a tender chop.
- 6.Serve the rested lamb chops alongside the roasted root vegetables, generously spooning the fresh pomegranate-mint gremolata over the top.
