Ingredients
- 250g lamb chops (about 2 chops)
- 120g quinoa
- 250ml water or vegetable broth
- 80g pomegranate seeds
- 150g cucumber, finely diced
- 15g fresh mint, chopped
- 15g fresh parsley, chopped
- 1 lemon, for juice
- 2 cloves garlic, minced
- 1 teaspoon dried oregano
- 2 tablespoons olive oil
- Salt and black pepper to taste
Instructions
- 1.Rinse 120g of quinoa under cold water. In a small pot, combine the quinoa with 250ml of water or broth. Bring to a boil, then reduce heat, cover, and simmer for 15 minutes or until all liquid is absorbed. Fluff with a fork and set aside.
- 2.While the quinoa cooks, pat the lamb chops dry. In a small bowl, mix 1 tablespoon of olive oil, the minced garlic, dried oregano, salt, and pepper. Rub this mixture evenly over both sides of the lamb chops.
- 3.Heat the remaining tablespoon of olive oil in a skillet over medium-high heat. Sear the lamb chops for 3-4 minutes per side for medium-rare, or adjust cooking time to your preferred doneness. Remove from the pan and let them rest.
- 4.In a large bowl, combine the cooked quinoa, diced cucumber, pomegranate seeds, chopped mint, and parsley.
- 5.Drizzle the salad with the juice of one lemon. Toss everything together until well combined. Season with a final pinch of salt and pepper if needed.
- 6.Divide the quinoa salad between two plates and serve with the rested lamb chops on top.
