Ingredients
- 500g ground lamb
- 200g quinoa
- 1 red bell pepper, chopped
- 1 large zucchini, chopped
- 250g cherry tomatoes
- 400g can chickpeas, rinsed and drained
- 1 red onion, chopped
- 3 cloves garlic, minced
- 60ml extra virgin olive oil, divided
- 1 lemon, juiced
- 2 tsp dried oregano
- 1 tsp dried rosemary
- Salt and black pepper to taste
Instructions
- 1.Preheat oven to 200°C. On a large baking sheet, toss the chopped bell pepper, zucchini, red onion, and whole cherry tomatoes with 30ml olive oil, 1 tsp of the oregano, salt, and pepper. Roast for 20-25 minutes until tender.
- 2.While vegetables roast, cook the quinoa. Rinse 200g of quinoa, then combine it in a saucepan with 400ml water and a pinch of salt. Bring to a boil, reduce heat, cover, and simmer for 15 minutes until all water is absorbed. Fluff with a fork.
- 3.In a large skillet over medium-high heat, add 15ml olive oil. Sauté the ground lamb with the minced garlic, the remaining 1 tsp oregano, and 1 tsp rosemary. Cook for 8-10 minutes, breaking up the meat, until fully browned. Drain any excess fat.
- 4.Prepare the dressing by whisking together the lemon juice and the remaining 15ml of olive oil, with a pinch of salt and pepper.
- 5.To assemble the meal prep bowls, divide the cooked quinoa, roasted vegetables, cooked lamb, and rinsed chickpeas evenly among 4 airtight containers. Store the dressing separately and drizzle over before serving.
