Ingredients
- 30ml olive oil
- 1 large onion, chopped
- 3 cloves garlic, minced
- 2 large carrots, diced
- 250g red lentils, rinsed
- 1 tablespoon ground cumin
- 1 teaspoon ground coriander
- 1 teaspoon turmeric powder
- 400g canned chopped tomatoes
- 1000ml vegetable broth
- 200g fresh spinach
- Juice of 1/2 lemon
- Salt and black pepper to taste
Instructions
- 1.Heat the olive oil in a large pot or Dutch oven over medium heat. Add the chopped onion and diced carrots, and sauté for 5-7 minutes until softened.
- 2.Add the minced garlic, ground cumin, ground coriander, and turmeric. Cook for 1 minute until fragrant, stirring constantly.
- 3.Stir in the rinsed red lentils, the canned chopped tomatoes, and the vegetable broth. Bring the mixture to a boil.
- 4.Reduce the heat to low, cover, and let it simmer gently for 15-20 minutes, or until the lentils are tender and the stew has thickened.
- 5.Remove the pot from the heat and stir in the fresh spinach. Allow the residual heat to wilt the spinach, which should take 1-2 minutes.
- 6.Squeeze in the fresh lemon juice and season generously with salt and pepper to your preference. Stir well and serve hot.
