Ingredients

- 1 large onion, chopped
- 2 carrots, chopped
- 2 cloves garlic, minced
- 200g brown or green lentils, rinsed
- 1 large sweet potato (approx. 400g), peeled and cubed
- 1 teaspoon ground cumin
- 1 teaspoon ground coriander
- 1/2 teaspoon turmeric
- 1 liter vegetable broth or water
- Salt and freshly ground black pepper to taste
- Juice of 1/2 lemon (optional)
- Fresh parsley, chopped (for garnish)
Instructions
- 1.Heat the olive oil in a large pot or Dutch oven over medium heat. Add the chopped onion and carrots, and cook for 5-7 minutes until softened.
- 2.Add the minced garlic, cumin, coriander, and turmeric. Stir and cook for 1 minute until fragrant.
- 3.Stir in the rinsed lentils, cubed sweet potato, and vegetable broth. Season with a pinch of salt and pepper.
- 4.Bring the mixture to a boil, then reduce the heat to low, cover, and let it simmer for 25-30 minutes, or until the lentils and sweet potatoes are tender.
- 5.Remove from heat. Stir in the lemon juice (if using) to brighten the flavors. Taste and adjust seasoning as needed.
- 6.Serve the stew warm, garnished with fresh parsley.
