Ingredients
- 250g lean lamb mince
- 400g sweet potato, cubed
- 200g zucchini, cubed
- 1 red onion, sliced
- 150g cherry tomatoes
- 2 cloves garlic, minced
- 30ml olive oil
- 1 teaspoon ground cumin
- 1 teaspoon ground coriander
- 1/2 teaspoon paprika
- 1/4 teaspoon ground cinnamon
- Juice of 1 lemon
- 15g fresh parsley, chopped
- 15g fresh mint, chopped
- Salt and freshly ground black pepper to taste
Instructions
- 1.Preheat your oven to 200°C. On a large baking tray, toss the cubed sweet potato, zucchini, and sliced red onion with 15ml of olive oil, salt, and pepper. Roast for 15 minutes.
- 2.While the vegetables are roasting, combine the lamb mince in a bowl with the minced garlic, cumin, coriander, paprika, cinnamon, salt, and pepper. Mix well and form into small meatballs.
- 3.After 15 minutes, remove the tray from the oven. Add the lamb meatballs and cherry tomatoes to the tray, gently tossing them with the vegetables.
- 4.Return the tray to the oven and cook for another 15-20 minutes, until the meatballs are cooked through and the vegetables are tender and slightly browned.
- 5.In a small bowl, prepare the dressing by whisking together the lemon juice, the remaining 15ml of olive oil, and the chopped fresh parsley and mint.
- 6.Remove the tray from the oven. Drizzle the fresh lemon-herb dressing over the hot meatballs and vegetables before serving.
