Ingredients
- 500g lean ground turkey
- 200g brown or green lentils (dry)
- 300g carrots
- 300g parsnips
- 1 large red onion
- 3 cloves garlic
- 30ml olive oil
- 1 tsp dried oregano
- 1 tsp dried basil
- 1 lemon (for juice)
- Salt to taste
- Black pepper to taste
Instructions
- 1.Preheat your oven to 200°C. While it heats, rinse 200g of lentils, place them in a pot with 600ml of water, bring to a boil, then simmer for 20-25 minutes until tender. Drain well.
- 2.Peel and chop the carrots and parsnips into bite-sized pieces. Slice the red onion. Toss the vegetables on a baking sheet with 15ml of olive oil, salt, and pepper. Roast for 20-25 minutes until tender and caramelized.
- 3.While the vegetables roast, prepare the meatballs. In a mixing bowl, combine the ground turkey, 2 minced garlic cloves, dried oregano, dried basil, salt, and pepper. Mix gently with your hands and form into 16-20 small meatballs.
- 4.Heat the remaining 15ml of olive oil in a large non-stick skillet over medium-high heat. Add the meatballs and cook for 10-12 minutes, turning occasionally, until golden brown and cooked through.
- 5.Stir the remaining 1 minced garlic clove into the cooked lentils. Season with a pinch of salt.
- 6.Assemble your meal-prep containers by dividing the lentils, roasted vegetables, and turkey meatballs evenly among 4 portions. Squeeze a wedge of fresh lemon over each before sealing to keep flavors bright.
