Ingredients
- 600g diced lean lamb leg or shoulder
- 2 tablespoons olive oil
- 1 large onion, chopped
- 3 cloves garlic, minced
- 1 teaspoon ground ginger
- 1 teaspoon ground cumin
- 1 teaspoon ground coriander
- 1/2 teaspoon turmeric
- 1/4 teaspoon cinnamon
- 500ml vegetable broth or water
- 2 large carrots, sliced
- 150g dried apricots, halved
- 2 medium zucchini, cut into large chunks
- Salt and freshly ground black pepper to taste
- 1 bunch fresh cilantro, chopped, for garnish
Instructions
- 1.Pat the lamb dry with paper towels and season generously with salt and pepper.
- 2.Heat the olive oil in a large pot or Dutch oven over medium-high heat. Brown the lamb in batches to ensure a good sear, then set aside on a plate.
- 3.Reduce the heat to medium. Add the chopped onion to the pot and sauté for 5-7 minutes until softened and translucent. Add the minced garlic, ground ginger, cumin, coriander, turmeric, and cinnamon, and cook for 1 minute more until fragrant.
- 4.Return the seared lamb to the pot. Pour in the vegetable broth, and add the sliced carrots and halved apricots. Stir everything together, scraping up any browned bits from the bottom of the pot.
- 5.Bring the mixture to a simmer, then reduce the heat to low, cover with a lid, and let it gently cook for 30 minutes.
- 6.Add the zucchini chunks to the pot, stir, and replace the lid. Continue to simmer for another 20-25 minutes, or until the lamb is tender and the vegetables are cooked through.
- 7.Taste and adjust seasoning with salt and pepper if needed. Serve the tagine hot, garnished with a generous amount of fresh cilantro.
