Ingredients
- 3 medium potatoes, peeled and diced
- 2 medium carrots, peeled and sliced
- 4 cups water
- 1 tsp salt
- 1/2 tsp black pepper
- 1/2 tsp dried thyme (optional)
- 1/2 tsp garlic powder (optional)
- Fresh parsley for garnish (optional)
Instructions
- 1.Peel and dice the potatoes. Peel and slice the carrots.
- 2.In a large pot, add water, potatoes, and carrots.
- 3.Bring to a boil over medium-high heat, then reduce heat and simmer for about 25 minutes until vegetables are tender.
- 4.Season with salt, pepper, and optional herbs or spices.
- 5.Blend part of the soup with an immersion blender for a creamy texture, or leave it chunky if preferred.
- 6.Garnish with fresh parsley before serving.
