Ingredients
- 300g cod fillets, skinless
- 1 tbsp olive oil
- 1 tsp paprika
- 1 tsp ground cumin
- 1/2 tsp ground turmeric
- 1 clove garlic, minced
- Salt and black pepper to taste
- 1 red bell pepper, chopped
- 1 courgette (zucchini), chopped
- 1 red onion, chopped
- 200g canned chickpeas, rinsed and drained
- 150g whole wheat couscous
- 200ml vegetable broth, hot
- Juice of 1/2 lemon
- 2 tbsp fresh parsley, chopped for garnish
Instructions
- 1.Preheat oven to 200°C. On a baking sheet, toss the chopped bell pepper, courgette, and red onion with half the olive oil, salt, and pepper. Roast for 15-20 minutes until tender.
- 2.In a small bowl, mix together the paprika, cumin, turmeric, minced garlic, salt, and pepper. Pat the cod fillets dry and rub the spice mixture all over them.
- 3.Heat the remaining olive oil in a non-stick skillet over medium-high heat. Cook the cod for 3-4 minutes per side, until opaque and flaky.
- 4.While the cod cooks, place the dry couscous in a heatproof bowl. Add the roasted vegetables and rinsed chickpeas.
- 5.Pour the hot vegetable broth over the couscous mixture, stir once, cover, and let it stand for 5-7 minutes until the liquid is absorbed.
- 6.Fluff the couscous with a fork. Stir in the lemon juice and fresh parsley.
- 7.Serve the spiced cod fillets on a bed of the vegetable and chickpea couscous.
