Ingredients
- 600g lean boneless lamb shoulder, cubed
- 2 tablespoons olive oil
- 1 large onion, diced
- 3 cloves garlic, minced
- 2 medium carrots, chopped
- 100g dried apricots, halved
- 500ml water or vegetable broth
- 30g flaked almonds
- 2 teaspoons ground cumin
- 1 teaspoon ground coriander
- 1 teaspoon ground ginger
- 1 teaspoon turmeric powder
- 1/2 teaspoon cinnamon
- Salt and freshly ground black pepper to taste
- Small bunch of fresh cilantro, chopped
Instructions
- 1.Season the lamb cubes with salt and pepper. Heat olive oil in a large pot or Dutch oven over medium-high heat. Brown the lamb in batches, then remove from the pot and set aside.
- 2.Reduce heat to medium. Add the diced onion to the pot and cook for 5-7 minutes until softened. Add the minced garlic, cumin, coriander, ginger, turmeric, and cinnamon, and cook for another minute until fragrant.
- 3.Return the lamb to the pot along with any juices. Add the chopped carrots, halved apricots, and 500ml of water. Bring the mixture to a boil.
- 4.Reduce the heat to low, cover the pot, and let it simmer gently for 60-70 minutes, or until the lamb is perfectly tender and the sauce has thickened.
- 5.While the tagine simmers, toast the flaked almonds in a dry pan over medium heat for 1-2 minutes until lightly golden. Set aside for garnish.
- 6.Once cooked, stir the chopped cilantro into the tagine. Serve hot, garnished with the toasted almonds.
