Ingredients
- 100g green lentils (dried)
- 200g sweet potato, peeled and cubed
- 150g broccoli florets
- 1 medium bell pepper (any color), deseeded and chopped
- 2 cloves garlic, minced
- 80g red onion, thinly sliced
- 30ml olive oil
- Juice of 1/2 lemon
- 1 teaspoon dried thyme
- Salt, to taste
- Black pepper, to taste
Instructions
- 1.Preheat your oven to 200°C (fan assisted) or 220°C (conventional). Line a baking tray with parchment paper.
- 2.Rinse the green lentils thoroughly under cold water. Transfer them to a small saucepan and add 300ml of cold water. Bring to a boil, then reduce heat to low, cover, and simmer for 20-25 minutes, or until tender. Drain any excess water.
- 3.On the prepared baking tray, combine the cubed sweet potato, broccoli florets, chopped bell pepper, minced garlic, and sliced red onion. Drizzle with 20ml of olive oil, sprinkle with dried thyme, salt, and black pepper. Toss gently to ensure all vegetables are coated.
- 4.Roast the vegetables in the preheated oven for 20-25 minutes, stirring halfway through, until they are tender and slightly caramelized.
- 5.In a large bowl, combine the cooked lentils with the roasted vegetables. Drizzle with the remaining 10ml of olive oil and the fresh lemon juice. Toss gently to combine all ingredients.
