Ingredients
- 200g Red Lentils, split
- 200g Fresh Spinach
- 400g Canned Diced Tomatoes
- 1 large Onion, chopped
- 3 cloves Garlic, minced
- 2 cm Fresh Ginger, grated
- 2 tablespoons Olive Oil
- 1 teaspoon Cumin Powder
- 1 teaspoon Coriander Powder
- 1/2 teaspoon Turmeric Powder
- 750ml Vegetable Broth or Water
- Salt to taste
- Black Pepper to taste
- 1 tablespoon Fresh Lemon Juice
Instructions
- 1.Rinse the red lentils under cold water until the water runs clear. Set aside.
- 2.Finely chop the onion, mince the garlic, and grate the fresh ginger.
- 3.Heat the olive oil in a large pot or Dutch oven over medium heat. Add the chopped onion and cook until softened and translucent, about 5-7 minutes.
- 4.Add the minced garlic and grated ginger to the pot and cook for another minute until fragrant.
- 5.Stir in the cumin powder, coriander powder, and turmeric powder. Cook for 30 seconds, stirring constantly, until aromatic.
- 6.Add the rinsed lentils, diced tomatoes (undrained), and vegetable broth or water to the pot. Bring the mixture to a boil, then reduce the heat to low, cover, and simmer for 20-25 minutes, or until the lentils are tender and the dahl has thickened to your desired consistency. Stir occasionally to prevent sticking.
- 7.Stir in the fresh spinach a handful at a time, allowing it to wilt before adding more. Continue stirring until all the spinach has wilted into the dahl.
