- 500g sweet potatoes, peeled and cubed
- 200g brown or green lentils, rinsed
- 1 can (400g) diced tomatoes
- 1 liter vegetable broth
- Salt and black pepper to taste
- Juice of 1/2 lemon
Instructions
- 1.Heat the olive oil in a large pot or Dutch oven over medium heat. Sauté the chopped onion and diced carrots for 5-7 minutes until they begin to soften.
- 2.Add the minced garlic, cumin, coriander, and turmeric. Stir constantly and cook for 1 minute until the spices are fragrant.
- 3.Add the rinsed lentils, cubed sweet potatoes, canned tomatoes with their juice, and vegetable broth to the pot. Stir well to combine.
- 4.Bring the stew to a boil, then reduce the heat to a low simmer. Cover the pot and cook for 30-35 minutes, or until the lentils are soft and the sweet potatoes are tender.
- 5.Season generously with salt and pepper to taste. Turn off the heat and stir in the fresh lemon juice just before serving to brighten the flavors.
