Ingredients
- 300g ground lamb
- 400g sweet potato (1 large)
- 150g fresh spinach
- 1 medium red onion
- 2 cloves garlic
- 1 tbsp olive oil (15ml)
- 1 tsp ground cumin
- 1 tsp ground coriander
- 1/2 lemon
- Small handful of fresh mint or parsley
- Salt and black pepper to taste
Instructions
- 1.Peel and dice the sweet potato into 1-2 cm cubes. Finely chop the onion and mince the garlic.
- 2.Heat olive oil in a large skillet over medium-high heat. Add the onion and cook for 3-4 minutes until soft. Stir in the garlic, cumin, and coriander, and cook for 1 minute until fragrant.
- 3.Add the ground lamb to the skillet. Cook for 5-7 minutes, breaking it up with a spoon, until browned. Drain any excess fat if desired.
- 4.Add the diced sweet potatoes, a pinch of salt and pepper, and 60ml of water. Bring to a simmer, then cover, reduce heat to medium-low, and cook for 10-12 minutes until potatoes are tender.
- 5.Uncover the skillet and add the spinach in batches, stirring until just wilted.
- 6.Remove from heat. Stir in the chopped fresh mint (or parsley) and the juice of half a lemon. Adjust seasoning and serve warm.
