Ingredients
- 500g lean lamb mince
- 200g quinoa
- 1 red bell pepper
- 1 yellow bell pepper
- 1 courgette
- 1 red onion
- 2 cloves garlic, minced
- 400ml water
- 3 tbsp extra virgin olive oil
- 1 tsp ground cumin
- 1 tsp ground coriander
- 1/2 tsp cinnamon
- Juice of 1 lemon
- 20g fresh mint, chopped
- Salt and black pepper to taste
Instructions
- 1.Preheat oven to 200°C. Chop the bell peppers, courgette, and red onion into bite-sized pieces. Toss on a baking sheet with 1 tbsp olive oil, salt, and pepper. Roast for 20-25 minutes until tender and slightly caramelized.
- 2.Meanwhile, rinse the quinoa well. In a medium pot, bring the quinoa and 400ml water to a boil. Reduce heat to low, cover, and simmer for 15 minutes, or until all water is absorbed. Let stand covered for 5 minutes.
- 3.While the quinoa and vegetables cook, heat the remaining 2 tbsp of olive oil in a large skillet over medium-high heat. Add the lamb mince and cook until browned, breaking it up with a spoon. Drain off any excess fat.
- 4.Stir in the minced garlic, cumin, coriander, and cinnamon, cooking for 1 minute until fragrant. Season the lamb with salt and pepper to taste.
- 5.Fluff the cooked quinoa with a fork. Assemble the bowls by dividing the quinoa, then topping with the spiced lamb and roasted vegetables. Garnish with chopped fresh mint and a generous squeeze of fresh lemon juice before serving.
