Ingredients
- 500g ground turkey
- 200g quinoa
- 400ml water
- 1 large cucumber, diced
- 250g cherry tomatoes, halved
- 1 red bell pepper, diced
- 1 small red onion, finely sliced
- 2 cloves garlic, minced
- 15ml olive oil
- 5g dried oregano
- 5g ground cumin
- For the Vinaigrette:
- 60ml extra virgin olive oil
- 45ml fresh lemon juice
- 15g fresh mint, chopped
- 15g fresh parsley, chopped
- Salt and freshly ground black pepper to taste
Instructions
- 1.Rinse the quinoa under cold water. In a medium pot, combine the quinoa and 400ml of water. Bring to a boil, then reduce heat to a simmer, cover, and cook for 15-20 minutes, or until all the water is absorbed. Fluff with a fork and set aside.
- 2.While the quinoa cooks, prepare the vinaigrette. In a small bowl or jar, whisk together the extra virgin olive oil, lemon juice, chopped mint, chopped parsley, salt, and pepper. Set aside.
- 3.Heat 15ml of olive oil in a large skillet over medium-high heat. Add the ground turkey, minced garlic, dried oregano, and cumin. Cook, breaking up the meat with a spoon, for 8-10 minutes until browned and cooked through. Season with salt and pepper.
- 4.In a large bowl, combine the diced cucumber, halved cherry tomatoes, diced bell pepper, and sliced red onion.
- 5.To assemble, divide the cooked quinoa among four bowls. Top with the cooked ground turkey and the fresh vegetable mixture. Drizzle generously with the herb vinaigrette before serving.
