Ingredients
- 500g minced lamb
- 180g quinoa
- 1 red onion, finely chopped
- 1 red bell pepper, diced
- 1 yellow bell pepper, diced
- 1 zucchini, diced
- 200g cherry tomatoes
- 30g fresh mint, chopped
- 30g fresh parsley, chopped
- 2 cloves garlic, minced
- 1 lemon (for zest and juice)
- 1 teaspoon dried oregano
- 2 tablespoons olive oil
- 360ml water or vegetable broth
- Salt and black pepper to taste
Instructions
- 1.Preheat your oven to 200°C. On a baking sheet, toss the diced bell peppers and zucchini with 1 tablespoon of olive oil, salt, and pepper. Roast for 15 minutes.
- 2.While vegetables roast, rinse the quinoa thoroughly. In a medium saucepan, combine the quinoa and 360ml of water or broth, bring to a boil, then reduce heat, cover, and simmer for about 15 minutes until the liquid is absorbed.
- 3.In a large bowl, combine the minced lamb, red onion, garlic, chopped mint, parsley, lemon zest, oregano, salt, and pepper. Mix gently with your hands until just combined, then form into 8 small patties.
- 4.Heat the remaining 1 tablespoon of olive oil in a large skillet over medium-high heat. Cook the patties for 3-4 minutes per side until golden brown and cooked through.
- 5.Add the cherry tomatoes to the baking sheet with the other vegetables and roast for another 5-7 minutes until they just begin to soften.
- 6.Fluff the cooked quinoa with a fork. Gently fold in all the roasted vegetables and the juice of half a lemon. Season to taste.
- 7.Serve the warm herbed lamb patties immediately with the quinoa and vegetable medley.
