- 500g ground lamb
- 200g quinoa
- 400ml water or vegetable broth
- 1 large zucchini, chopped
- 2 bell peppers (1 red, 1 yellow), chopped
- 1 red onion, chopped
- 3 cloves garlic, minced
- 60ml extra virgin olive oil
- 60ml fresh lemon juice
- 2 tsp dried oregano
- 15g fresh mint, chopped
- Salt and black pepper to taste
Instructions
- 1.Preheat your oven to 200°C. On a large baking sheet, toss the chopped zucchini, bell peppers, and red onion with 30ml (2 tbsp) of olive oil, 1 tsp of oregano, salt, and pepper. Roast for 20-25 minutes until tender and slightly caramelized.
- 2.While the vegetables are roasting, rinse the quinoa thoroughly. In a medium saucepan, bring 400ml of water or broth to a boil. Add the quinoa, reduce heat to a low simmer, cover, and cook for 15 minutes, or until all the liquid is absorbed. Fluff with a fork.
- 3.In a large skillet, heat 15ml (1 tbsp) of olive oil over medium-high heat. Sauté the minced garlic for 30 seconds until fragrant, then add the ground lamb. Season with the remaining 1 tsp of oregano, salt, and pepper. Cook for 8-10 minutes, breaking up the meat, until fully browned. Drain any excess fat.
- 4.To make the dressing, whisk together the remaining 15ml (1 tbsp) of olive oil, the fresh lemon juice, and the chopped mint in a small bowl. Season with a pinch of salt and pepper.
