Ingredients
- 500g ground lamb
- 200g quinoa
- 1 large cucumber
- 250g cherry tomatoes
- 1 red onion
- 2 cloves garlic
- 20g fresh parsley
- 20g fresh mint
- 1 lemon
- 30ml olive oil
- 5g ground cumin
- 5g ground coriander
- Salt and black pepper to taste
Instructions
- 1.Rinse the quinoa under cold water. In a saucepan, combine the quinoa with 400ml of water and a pinch of salt. Bring to a boil, then reduce heat, cover, and simmer for 15-20 minutes until the water is absorbed.
- 2.While the quinoa cooks, finely chop half the red onion, the garlic, parsley, and mint. In a large bowl, combine the ground lamb, chopped herbs, garlic, cumin, coriander, and a generous pinch of salt and pepper. Mix well.
- 3.Shape the lamb mixture into 8 small, thick patties. Heat 15ml of olive oil in a large skillet over medium-high heat. Cook the patties for 4-5 minutes per side, until browned and cooked through.
- 4.Prepare the salad by halving the cherry tomatoes, dicing the cucumber, and thinly slicing the remaining red onion. In a bowl, toss the vegetables with the juice of one lemon, the remaining 15ml of olive oil, salt, and pepper.
- 5.Once the quinoa is cooked, fluff it with a fork and season as desired.
- 6.Serve the warm lamb patties alongside the quinoa and the fresh cucumber-tomato salad.
