Ingredients
- 500g ground lamb
- 200g quinoa
- 400ml water
- 1 large red bell pepper
- 1 large yellow bell pepper
- 1 large zucchini
- 1 large red onion
- 3 cloves garlic
- 60ml extra virgin olive oil
- 1 lemon
- 15g fresh parsley, chopped
- 5g dried oregano
- 5g ground cumin
- Salt and black pepper to taste
Instructions
- 1.Preheat your oven to 200°C. Chop the bell peppers, zucchini, and red onion into bite-sized pieces.
- 2.On a large baking sheet, toss the chopped vegetables with 30ml of olive oil, salt, and pepper. Roast for 25-30 minutes, until tender and slightly caramelized.
- 3.While the vegetables roast, rinse the quinoa. In a medium saucepan, combine the quinoa with 400ml of water and a pinch of salt. Bring to a boil, then reduce heat, cover, and simmer for 15 minutes or until all water is absorbed. Fluff with a fork.
- 4.In a large skillet over medium-high heat, cook the ground lamb until browned, breaking it apart with a spoon. Drain any excess fat.
- 5.Mince 2 cloves of garlic and add to the lamb along with the dried oregano, ground cumin, salt, and pepper. Sauté for 1-2 minutes until fragrant.
- 6.To prepare the drizzle, whisk together the remaining 30ml of olive oil, the juice of one lemon, the chopped fresh parsley, and one minced clove of garlic. Season with salt and pepper.
