Ingredients
- 4 small lamb chops (approx. 350g total)
- 120g quinoa, rinsed
- 250ml water or vegetable broth
- 200g carrots, peeled and chopped
- 200g parsnips, peeled and chopped
- 30ml olive oil
- 2 cloves garlic, minced
- 1 teaspoon ground cumin
- 1 teaspoon ground coriander
- 1/2 teaspoon ground cinnamon
- 1/2 teaspoon smoked paprika
- 1 lemon, for juice
- 15g fresh mint, chopped
- Salt and freshly ground black pepper to taste
Instructions
- 1.Preheat your oven to 200°C (400°F). On a baking tray, toss the chopped carrots and parsnips with half the olive oil, salt, and pepper. Roast for 25-30 minutes, or until tender and lightly caramelized.
- 2.While the vegetables roast, cook the quinoa. Combine the rinsed quinoa and 250ml of water or broth in a small saucepan. Bring to a boil, then reduce heat, cover, and simmer for 15 minutes or until the liquid is absorbed.
- 3.In a small bowl, mix together the cumin, coriander, cinnamon, paprika, and minced garlic. Pat the lamb chops dry and rub the spice mixture evenly over all sides.
- 4.Heat the remaining olive oil in a skillet over medium-high heat. Sear the lamb chops for 3-4 minutes per side for medium-rare, or longer depending on your desired doneness.
- 5.Once the quinoa is cooked, remove it from the heat and let it stand, covered, for 5 minutes. Fluff with a fork and stir in the chopped fresh mint, a generous squeeze of lemon juice, and a pinch of salt.
- 6.Serve the Moroccan-spiced lamb chops immediately with the minted quinoa and roasted root vegetables on the side.
