Ingredients
- 500g ground turkey
- 200g dry quinoa
- 400ml water or vegetable broth
- 1 red bell pepper, diced
- 250g cherry tomatoes, halved
- 1 medium cucumber, diced
- 1 small red onion, thinly sliced
- 100g fresh spinach
- 2 cloves garlic, minced
- 30ml olive oil
- 30ml fresh lemon juice
- 1 tsp dried oregano
- Salt and black pepper to taste
Instructions
- 1.Rinse the quinoa under cold water. In a medium saucepan, combine the quinoa and 400ml of water or broth. Bring to a boil, then reduce heat to low, cover, and simmer for 15-20 minutes, or until the liquid is absorbed. Fluff with a fork.
- 2.While the quinoa cooks, heat 15ml of olive oil in a large skillet over medium-high heat. Add the minced garlic and half of the sliced red onion, cooking for 1 minute until fragrant.
- 3.Add the ground turkey to the skillet. Season with oregano, salt, and pepper. Cook, breaking it apart with a spoon, for 6-8 minutes until browned and cooked through.
- 4.Add the diced red bell pepper to the skillet with the turkey and cook for another 3-4 minutes until slightly softened but still crisp.
- 5.Prepare the fresh components by dicing the cucumber and halving the cherry tomatoes.
- 6.To assemble the meal prep containers, divide the cooked quinoa, turkey and pepper mixture, fresh spinach, cherry tomatoes, diced cucumber, and remaining red onion evenly among four containers. Drizzle with olive oil and lemon juice just before serving.
