Ingredients
- 450g lean ground lamb
- 200g brown or green lentils, rinsed
- 750ml vegetable broth or water
- 30ml olive oil
- 1 large onion, chopped
- 3 cloves garlic, minced
- 1 medium zucchini, diced
- 1 large red bell pepper, diced
- 150g fresh spinach
- 2 teaspoons ground cumin
- 1 teaspoon ground coriander
- 1 teaspoon dried oregano
- 1/4 teaspoon ground cinnamon
- Juice of 1 lemon
- Salt and black pepper to taste
Instructions
- 1.In a medium pot, combine the rinsed lentils and vegetable broth. Bring to a boil, then reduce heat, cover, and simmer for 20-25 minutes, or until tender but not mushy. Drain any excess liquid.
- 2.While the lentils cook, heat the olive oil in a large skillet over medium-high heat. Add the chopped onion and sauté for 3-4 minutes until softened.
- 3.Add the minced garlic, ground cumin, coriander, oregano, and cinnamon. Cook for another minute until fragrant.
- 4.Add the ground lamb to the skillet. Break it up with a spoon and cook until browned all over, about 5-7 minutes. Drain excess fat if necessary.
- 5.Stir in the diced zucchini and bell pepper. Cook for 5-6 minutes until the vegetables are tender-crisp.
- 6.Add the cooked lentils and fresh spinach to the skillet. Stir everything together until the spinach has wilted, about 2-3 minutes.
- 7.Remove the skillet from the heat. Squeeze in the lemon juice and season generously with salt and pepper to taste. Stir to combine.
- 8.Divide the mixture evenly among 4 containers for meal prep. Allow to cool before sealing and storing in the refrigerator for up to 4 days.
