Ingredients
- 250g lean ground lamb
- 200g carrots
- 150g parsnips
- 200g sweet potato
- 1/2 large cucumber
- 1 small onion, finely chopped
- 2 cloves garlic, minced
- 15g fresh mint, chopped
- 15g fresh parsley, chopped
- 30ml olive oil
- 15ml lemon juice
- 5g ground cumin
- 5g ground coriander
- 5g dried rosemary
- Salt and freshly ground black pepper to taste
Instructions
- 1.Preheat your oven to 200°C. Chop the carrots, parsnips, and sweet potato into 2-3 cm chunks. Toss with half the olive oil, rosemary, salt, and pepper on a baking tray. Roast for 25-30 minutes until tender.
- 2.In a bowl, combine the ground lamb, chopped onion, minced garlic, half the chopped mint, half the chopped parsley, cumin, and coriander. Season with salt and pepper and mix well.
- 3.Divide the lamb mixture into 6-8 portions and shape them into ovals. Heat the remaining olive oil in a non-stick pan over medium-high heat.
- 4.Cook the koftas for 8-10 minutes, turning occasionally, until browned on all sides and cooked through.
- 5.To make the relish, grate the cucumber and squeeze out excess water. Combine it with the remaining mint, parsley, lemon juice, and a pinch of salt.
- 6.Serve the hot lamb koftas immediately with the roasted root vegetables and a dollop of the fresh cucumber-mint relish.
