Ingredients
- 400g lean lamb mince
- 100g brown or green lentils, dry
- 1 red onion, finely chopped
- 3 cloves garlic (2 minced, 1 grated)
- 30g fresh parsley, chopped
- 15g fresh mint, chopped
- 10g fresh dill, chopped
- 1 large egg
- 1 teaspoon ground cumin
- 1 teaspoon ground coriander
- 1/2 teaspoon ground cinnamon
- 2 tablespoons olive oil
- 200g Greek yogurt
- 1 lemon (for zest and juice)
- Salt and black pepper to taste
Instructions
- 1.Rinse 100g of lentils and place them in a small saucepan with 400ml of water. Bring to a boil, then reduce heat and simmer for 20-25 minutes until tender. Drain any excess water thoroughly and set aside.
- 2.While the lentils cook, prepare the dip. In a small bowl, combine 200g Greek yogurt, the chopped dill, 1 grated garlic clove, and the zest and juice of half a lemon. Season with a pinch of salt, stir well, and refrigerate until needed.
- 3.In a large bowl, combine the 400g lamb mince, cooked lentils, chopped red onion, 2 minced garlic cloves, chopped parsley, and chopped mint. Add the egg, ground cumin, ground coriander, and ground cinnamon.
- 4.Season with salt and pepper, then use your hands to gently mix all ingredients until just combined. Be careful not to overwork the mixture. Form into 8-12 equal-sized patties.
- 5.Heat 2 tablespoons of olive oil in a large skillet over medium-high heat. Carefully place the patties in the pan and cook for 4-5 minutes on each side, until golden brown and cooked through.
- 6.Serve the warm lamb and lentil patties immediately, accompanied by the chilled yogurt dip and wedges from the remaining half of the lemon for squeezing over.
