Ingredients
- 200g brown or green lentils, dry
- 400g sweet potato
- 1 medium onion, finely chopped
- 2 cloves garlic, minced
- 30g whole wheat flour
- 1 teaspoon ground cumin
- 1 teaspoon ground coriander
- 1/2 teaspoon turmeric
- 2 tablespoons olive oil
- 150g plain Greek yogurt
- 1 tablespoon fresh mint or parsley, chopped
- 1 tablespoon lemon juice
- Salt and black pepper to taste
Instructions
- 1.Rinse the lentils and cook them in a pot of water for 20-25 minutes until tender. Meanwhile, peel and boil or steam the sweet potato until very soft. Drain both well.
- 2.In a small pan, heat 1 tablespoon of olive oil over medium heat. Sauté the chopped onion for 5-7 minutes until softened, then add the minced garlic and cook for another minute until fragrant.
- 3.In a large bowl, mash the cooked sweet potato. Add the cooked lentils, sautéed onion and garlic, flour, cumin, coriander, turmeric, salt, and pepper. Mix until everything is well combined.
- 4.Form the mixture into 8 equal-sized patties. If the mixture is too sticky, you can chill it for 15 minutes.
- 5.Heat the remaining 1 tablespoon of olive oil in a large non-stick skillet over medium-high heat. Carefully place the patties in the pan and cook for 4-5 minutes per side, until golden brown and crisp.
- 6.While the cakes are cooking, prepare the dip. In a small bowl, combine the Greek yogurt, chopped fresh herbs, lemon juice, and a pinch of salt and pepper. Stir well.
- 7.Serve the warm lentil and sweet potato cakes immediately with the cool herb yogurt dip on the side.
