Ingredients
- 500g lamb mince
- 200g quinoa
- 80g dried apricots, chopped
- 1 large cucumber, diced
- 250g cherry tomatoes, halved
- 1 red onion, finely chopped
- 3 cloves garlic, minced
- 1 large bunch fresh parsley, chopped
- 1 small bunch fresh mint, chopped
- 1 lemon, juiced
- 60ml olive oil
- 2 tsp ground cumin
- 2 tsp ground coriander
- 1 tsp ground cinnamon
- Salt and black pepper to taste
Instructions
- 1.Cook the quinoa according to package directions. Once cooked, fluff with a fork and set aside in a large bowl to cool slightly.
- 2.In a separate bowl, combine the lamb mince, half of the minced garlic, 1 tsp cumin, 1 tsp coriander, 1/2 tsp cinnamon, salt, and pepper. Mix well and form into about 20 small meatballs.
- 3.Heat 30ml (2 tbsp) of olive oil in a large skillet over medium-high heat. Add the meatballs and cook for 8-10 minutes, turning occasionally until browned on all sides and cooked through.
- 4.While the meatballs are cooking, add the diced cucumber, halved tomatoes, chopped red onion, parsley, mint, and apricots to the bowl with the cooked quinoa.
- 5.In a small jar or bowl, create the dressing by whisking together the lemon juice, the remaining 30ml of olive oil, the remaining minced garlic, 1 tsp cumin, 1 tsp coriander, and 1/2 tsp cinnamon. Season with salt and pepper.
- 6.Pour the dressing over the quinoa and vegetable mixture. Toss everything together until well combined.
- 7.Serve the warm Moroccan-spiced meatballs alongside the fresh and flavorful apricot quinoa.
