Ingredients
- 1 cup dried lentils
- 2 cups mixed vegetables (carrots, broccoli, bell peppers)
- 1 tbsp olive oil
- 2 cloves garlic, minced
- 1 tsp ground cumin
- 1 tsp paprika
- Salt to taste
- Black pepper to taste
- 1 tbsp fresh parsley, chopped (optional)
Instructions
- 1.Rinse lentils thoroughly and cook them in a pot with 3 cups of water until tender, about 20 minutes. Drain any excess water.
- 2.Heat olive oil in a large pan over medium heat.
- 3.Add minced garlic and sauté for 1 minute until fragrant.
- 4.Add mixed vegetables and cook for 7–8 minutes until tender-crisp.
- 5.Stir in the cooked lentils, cumin, paprika, salt, and pepper. Mix well and cook for another 2–3 minutes.
- 6.Garnish with fresh parsley if desired and serve warm.
