Ingredients
- 500g ground lamb
- 200g brown or green lentils, rinsed
- 1 large onion, chopped
- 3 cloves garlic, minced
- 2 large carrots, diced
- 1 liter vegetable broth
- 400g canned chopped tomatoes
- 150g fresh spinach
- 2 tablespoons olive oil
- 2 teaspoons ground cumin
- 1 teaspoon ground coriander
- 1 teaspoon turmeric powder
- 1/2 teaspoon paprika
- Salt and freshly ground black pepper to taste
Instructions
- 1.Heat the olive oil in a large pot or Dutch oven over medium heat. Add the chopped onion and cook for 5-7 minutes until softened and translucent.
- 2.Add the minced garlic, ground cumin, coriander, turmeric, and paprika. Stir for one minute until fragrant.
- 3.Add the ground lamb to the pot. Cook, breaking it up with a spoon, until browned all over, about 5-7 minutes.
- 4.Stir in the rinsed lentils, diced carrots, canned tomatoes, and vegetable broth. Season with salt and pepper.
- 5.Bring the stew to a boil, then reduce the heat to low, cover, and let it simmer for 35-40 minutes, or until the lentils are tender.
- 6.Stir in the fresh spinach and cook for another 2-3 minutes until it has wilted into the stew.
- 7.Taste and adjust seasoning if necessary. Divide into four containers for meal prep or serve immediately.
