Ingredients
- 500g lean minced lamb
- 200g quinoa, rinsed
- 1 large red bell pepper, chopped
- 1 large zucchini, chopped
- 200g cherry tomatoes
- 1 red onion, chopped
- 3 cloves garlic, minced
- 60ml extra virgin olive oil, divided
- 1 large lemon, juiced
- 1 small bunch fresh parsley, chopped
- 1 tsp dried oregano
- Salt and black pepper to taste
Instructions
- 1.Preheat your oven to 200°C. On a large baking sheet, toss the chopped bell pepper, zucchini, and half of the red onion with 30ml of olive oil, dried oregano, salt, and pepper. Roast for 20 minutes.
- 2.Add the cherry tomatoes to the baking sheet and roast for another 10-15 minutes, until all vegetables are tender and slightly caramelized.
- 3.While the vegetables are roasting, cook the quinoa. In a medium saucepan, combine the rinsed quinoa with 400ml of water and a pinch of salt. Bring to a boil, then reduce heat, cover, and simmer for 15 minutes or until the water is absorbed.
- 4.In a large skillet over medium-high heat, sauté the remaining chopped red onion and minced garlic for 2-3 minutes. Add the minced lamb, breaking it up with a spoon, and cook until browned, about 8-10 minutes. Drain any excess fat.
- 5.Prepare the dressing by whisking together the remaining 30ml of olive oil, fresh lemon juice, and chopped parsley in a small bowl. Season with a pinch of salt and pepper.
- 6.To assemble your meal-prep bowls, divide the cooked quinoa, roasted vegetables, and seasoned lamb evenly among four containers. Drizzle with the dressing before serving or store it separately to maintain freshness.
