Ingredients
- 200g red lentils, rinsed
- 400g sweet potato, peeled and cubed
- 1 medium onion, finely chopped
- 2 cloves garlic, minced
- 1 medium carrot, grated
- 2 tablespoons olive oil
- 1 teaspoon ground cumin
- 1 teaspoon ground coriander
- 1/2 teaspoon turmeric
- 20g fresh parsley, chopped
- Juice of 1/2 lemon
- Salt and black pepper to taste
Instructions
- 1.Place the rinsed lentils and cubed sweet potato in a medium pot. Cover with water by about 2 cm. Bring to a boil, then reduce heat and simmer for 15-20 minutes, or until the lentils are soft and the sweet potato is tender.
- 2.While the lentils cook, heat 1 tablespoon of olive oil in a small pan over medium heat. Sauté the chopped onion for 5-7 minutes until softened. Add the minced garlic, cumin, coriander, and turmeric, and cook for another minute until fragrant.
- 3.Drain any excess water from the lentil and sweet potato mixture. Mash them together in a large bowl using a fork or potato masher until mostly smooth.
- 4.Add the sautéed onion mixture, grated carrot, chopped parsley, and lemon juice to the bowl. Season with salt and pepper. Mix everything until well combined and let the mixture cool for 10 minutes.
- 5.Form the mixture into 8-10 patties. Heat the remaining tablespoon of olive oil in a large skillet over medium-high heat. Cook the patties for 4-5 minutes per side, until golden brown and crisp.
- 6.Serve the patties warm, perhaps with a side of yogurt dip or a fresh salad.
