Ingredients
- 400g ground turkey
- 200g red lentils, rinsed
- 1 large onion, diced
- 3 cloves garlic, minced
- 2 medium carrots, chopped
- 2 celery stalks, chopped
- 150g fresh spinach
- 1000ml low-sodium vegetable broth
- 2 tablespoons olive oil
- 2 teaspoons ground cumin
- 1 teaspoon ground coriander
- 1 teaspoon smoked paprika
- 1/2 lemon, juiced
- Fresh parsley, chopped, for garnish
- Salt and black pepper to taste
Instructions
- 1.Heat olive oil in a large pot or Dutch oven over medium heat. Add the diced onion, carrots, and celery. Sauté for 6-8 minutes until softened.
- 2.Add the minced garlic, ground cumin, ground coriander, and smoked paprika. Cook for 1 minute more until fragrant.
- 3.Add the ground turkey to the pot. Cook, breaking it up with a spoon, until browned all over, about 5-7 minutes.
- 4.Stir in the rinsed red lentils and the vegetable broth. Bring the mixture to a boil, then reduce the heat to a simmer. Cover and cook for 15-20 minutes, or until the lentils are tender.
- 5.Stir in the fresh spinach and cook until it wilts, which should take about 2-3 minutes.
- 6.Remove the pot from the heat. Stir in the fresh lemon juice and chopped parsley. Season with salt and pepper to taste before serving.
