Ingredients
- 500g lean ground turkey
- 200g quinoa
- 1 large zucchini, chopped
- 1 red bell pepper, chopped
- 1 yellow bell pepper, chopped
- 250g cherry tomatoes, halved
- 1 large onion, diced
- 3 cloves garlic, minced
- 45ml olive oil, divided
- 2 tsp dried oregano
- 1 lemon, for juice
- Fresh parsley, chopped (for garnish)
- Salt and black pepper to taste
Instructions
- 1.Preheat your oven to 200°C. On a large baking sheet, toss the chopped zucchini, bell peppers, and cherry tomatoes with 30ml (2 tbsp) of olive oil, salt, and pepper. Roast for 20-25 minutes, until tender and slightly caramelized.
- 2.While the vegetables roast, cook the quinoa. Rinse 200g of quinoa under cold water. In a medium pot, combine the quinoa with 400ml of water. Bring to a boil, then reduce heat, cover, and simmer for 15-20 minutes until the water is absorbed. Fluff with a fork.
- 3.In a large skillet, heat the remaining 15ml (1 tbsp) of olive oil over medium-high heat. Add the diced onion and cook until softened, about 5 minutes. Add the minced garlic and cook for another minute until fragrant.
- 4.Add the ground turkey to the skillet. Use a spoon to break it apart and cook until browned all over, about 8-10 minutes. Drain any excess fat. Season with dried oregano, salt, and pepper.
- 5.Assemble the meal prep bowls. Divide the cooked quinoa evenly among four containers. Top with the seasoned ground turkey and the roasted vegetables. Squeeze fresh lemon juice over each bowl and garnish with chopped parsley just before serving.
