Ingredients
- 500g lean ground turkey
- 200g brown or green lentils, rinsed
- 1 large onion, chopped
- 3 cloves garlic, minced
- 1 large zucchini, diced
- 400g canned chopped tomatoes
- 800ml vegetable broth
- 150g fresh spinach
- 2 tablespoons olive oil
- 1 teaspoon dried oregano
- Juice of 1/2 lemon
- Salt and black pepper to taste
Instructions
- 1.Heat the olive oil in a large skillet or pot over medium-high heat. Add the chopped onion and cook for 3-4 minutes until softened. Add the minced garlic and cook for another minute until fragrant.
- 2.Add the ground turkey to the skillet. Break it up with a spoon and cook until browned all over, about 5-7 minutes. Drain any excess fat if necessary.
- 3.Stir in the rinsed lentils, canned tomatoes, vegetable broth, and dried oregano. Season with salt and pepper. Bring the mixture to a boil, then reduce the heat to low, cover, and simmer for 20 minutes.
- 4.Add the diced zucchini to the skillet, stir, and continue to simmer (covered) for another 10-15 minutes, or until the lentils are tender and the zucchini is cooked through.
- 5.Remove the skillet from the heat. Stir in the fresh spinach until it wilts, then squeeze in the lemon juice. Taste and adjust seasoning with more salt and pepper if needed before serving.
