Ingredients
- 1 cup quinoa
- 2 cups water
- 1 cup cherry tomatoes, halved
- 1 cucumber, diced
- 1 red bell pepper, diced
- 1/4 cup red onion, finely chopped
- 2 tbsp olive oil
- 2 tbsp lemon juice
- 1 tsp dried oregano
- Salt to taste
- Black pepper to taste
- 2 tbsp fresh parsley, chopped
Instructions
- 1.Rinse the quinoa under cold water.
- 2.In a saucepan, bring 2 cups of water to a boil, add quinoa, reduce heat to low, cover, and simmer for 15 minutes until water is absorbed.
- 3.Fluff the cooked quinoa with a fork and let it cool slightly.
- 4.In a large bowl, combine cherry tomatoes, cucumber, red bell pepper, and red onion.
- 5.Add the cooled quinoa to the bowl and mix gently.
- 6.In a small bowl, whisk together olive oil, lemon juice, oregano, salt, and black pepper.
- 7.Pour the dressing over the quinoa and vegetables, toss well to combine.
- 8.Garnish with fresh parsley before serving.
