- 400g sweet potato, peeled and cubed
- 50g fresh baby spinach
- 1 small onion, finely chopped

- 250ml water or unsalted vegetable broth

- 1.Heat the olive oil in a saucepan over medium heat. Add the chopped onion and minced garlic, sautéing for 2-3 minutes until softened and fragrant.
- 2.Add the lean lamb mince to the pan. Break it apart with a spoon and cook for 5-7 minutes until fully browned.
- 3.Stir in the cubed sweet potato and pour in the water or unsalted broth. Add the optional rosemary, bring to a simmer, then cover and cook for 10-12 minutes until the sweet potato is very tender.
- 4.Remove the pan from the heat and stir in the fresh baby spinach. Cover the pan for 1-2 minutes to allow the spinach to wilt from the residual heat.
- 5.For a smooth puree suitable for babies, carefully transfer the mixture to a blender and process until smooth. For a chunkier mash for toddlers, use a potato masher or fork directly in the pan.
- 6.Let the mash cool to a safe temperature before serving. Store leftovers in an airtight container in the refrigerator for up to 2 days or freeze in individual portions.
