- 1 kg potatoes
- 1 head of garlic
- 60 ml olive oil
- 2 tablespoons fresh rosemary, chopped
- Salt and freshly ground black pepper to taste

- 1.Preheat your oven to 200°C. Thoroughly wash the potatoes and cut them into 3-4 cm chunks. Mince 4-5 cloves of garlic.
- 2.In a large bowl, toss the potato chunks with half of the olive oil (30 ml), the minced garlic, half of the chopped rosemary, salt, and pepper until evenly coated.
- 3.Spread the potatoes in a single layer on a large baking tray and roast for 20 minutes.
- 4.While the potatoes are roasting, pat the tomahawk steak dry with paper towels. Rub the remaining olive oil, rosemary, salt, and pepper all over the steak.
- 5.Heat a large, oven-safe skillet or pan over high heat. Sear the steak for 2-3 minutes on each side until a rich, brown crust forms.
- 6.After 20 minutes, push the potatoes to one side of the baking tray. Place the seared steak on the empty side of the tray.
- 7.Return the tray to the oven and roast for another 20-25 minutes for a medium-rare finish, or adjust to your preferred doneness.
- 8.Remove the steak from the oven and transfer it to a cutting board. Let it rest for at least 10-15 minutes before carving. This is crucial for a juicy result.
- 9.Carve the steak against the grain and serve immediately with the roasted garlic potatoes.
