Ingredients
- 300g ground lamb
- 300g sweet potato, peeled and diced (1cm cubes)
- 1 medium zucchini (approx. 200g), diced
- 1 large carrot (approx. 100g), diced
- 1 small yellow onion, finely chopped
- 2 cloves garlic, minced
- 2 cm fresh ginger, grated
- 2 tablespoons extra virgin olive oil
- 1 teaspoon ground turmeric
- 1/2 teaspoon sea salt (or to taste)
- 15g fresh mint, chopped
- 15g fresh cilantro, chopped
Instructions
- Heat the olive oil in a large skillet or pan over medium heat. Add the chopped onion and cook for 3–4 minutes until softened.
- Add the minced garlic and grated ginger, stirring for another minute until fragrant.
- Add the ground lamb to the skillet. Break it up with a spoon and cook until browned all over, about 5–7 minutes. Drain any excess fat if necessary.
- Stir in the ground turmeric and salt. Add the diced sweet potato and carrot, combining everything well.
- Cover the skillet, reduce heat to medium-low, and cook for 10–12 minutes, or until the sweet potato is tender when pierced with a fork.
- Add the diced zucchini and cook for another 4–5 minutes until tender-crisp.
- Remove from heat and stir in chopped mint and cilantro. Serve warm and enjoy!
