Ingredients
- 250g diced lamb stew meat
- 100g dry brown or green lentils, rinsed
- 300g sweet potato, peeled and cubed
- 100g fresh spinach
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 500ml low-sodium vegetable broth
- 15ml olive oil
- 1 tsp ground cumin
- 1 tsp ground coriander
- Juice of 1/2 lemon
- Salt and freshly ground black pepper to taste
Instructions
- 1.In a large pot over medium-high heat, warm the olive oil. Add the lamb, season with salt and pepper, and brown on all sides. Remove the lamb and set it aside.
- 2.Lower the heat to medium, add the onion and cook for 5 minutes until soft. Stir in the garlic, cumin, and coriander, cooking for another minute until fragrant.
- 3.Add the rinsed lentils, cubed sweet potato, and vegetable broth. Bring the mixture to a boil, then reduce heat, cover, and let it simmer for 20 minutes.
- 4.Return the browned lamb to the pot. Cover and continue simmering for 15 minutes, or until the lamb, lentils, and sweet potato are tender.
- 5.Stir in the fresh spinach and cook just until it wilts, about 2-3 minutes.
- 6.Remove from the heat, stir in the lemon juice, and adjust seasoning with salt and pepper. Serve hot.
