Ingredients
- 200g ground lamb
- 120g quinoa
- 240ml water
- 200g cherry tomatoes, halved
- 1/2 cucumber, diced
- 1/4 red onion, thinly sliced
- 50g baby spinach
- 1 tablespoon olive oil
- 2 tablespoons tahini
- 1 lemon, juiced
- 2 cloves garlic, minced
- 15g fresh parsley, chopped
- 10g fresh mint, chopped
- 1 teaspoon ground cumin
- 1/2 teaspoon ground coriander
- Salt and freshly ground black pepper to taste
Instructions
- 1.Rinse 120g of quinoa under cold water. In a small pot, combine the quinoa with 240ml of water and a pinch of salt. Bring to a boil, then reduce heat to low, cover, and simmer for 15 minutes until the water is absorbed. Fluff with a fork.
- 2.While the quinoa cooks, heat 1 tablespoon of olive oil in a skillet over medium-high heat. Add 1 minced garlic clove and the 200g of ground lamb. Season with cumin, coriander, salt, and pepper. Cook for 8-10 minutes until browned, breaking the meat apart with a spoon.
- 3.To make the dressing, whisk together 2 tablespoons of tahini, the juice of 1 lemon, the remaining minced garlic clove, and 2-3 tablespoons of water in a small bowl until smooth. Stir in most of the chopped parsley and mint.
- 4.Assemble the bowls by dividing the 50g of baby spinach and the cooked quinoa between two plates. Top with the spiced lamb, halved cherry tomatoes, diced cucumber, and sliced red onion.
- 5.Drizzle generously with the herbed tahini dressing and garnish with the remaining fresh herbs before serving.
