Ingredients
- 250g lean ground lamb
- 150g quinoa
- 300ml water or vegetable broth
- 1 small red onion, finely chopped
- 2 cloves garlic, minced
- 1 red bell pepper, diced
- 150g cherry tomatoes, halved
- 100g fresh spinach
- 200g cooked chickpeas, rinsed
- 1 lemon, juiced
- 2 tablespoons olive oil
- 15g fresh mint, chopped
- 15g fresh parsley, chopped
- Salt and freshly ground black pepper to taste
Instructions
- 1.Rinse the quinoa under cold water. In a small pot, combine the quinoa and water or broth. Bring to a boil, then reduce heat, cover, and simmer for 15-20 minutes, or until all the liquid is absorbed. Fluff with a fork.
- 2.While the quinoa cooks, heat 1 tablespoon of olive oil in a skillet over medium-high heat. Add the chopped onion and garlic and sauté for 2-3 minutes until fragrant.
- 3.Add the ground lamb to the skillet. Cook, breaking it up with a spoon, for 8-10 minutes until fully browned and cooked through. Drain any excess fat and season with salt and pepper.
- 4.In a small bowl, whisk together the remaining 1 tablespoon of olive oil, lemon juice, chopped mint, and parsley to create the dressing. Season with a pinch of salt and pepper.
- 5.To assemble, divide the cooked quinoa between two bowls. Top with the cooked lamb, fresh spinach, cherry tomatoes, diced bell pepper, and chickpeas.
- 6.Drizzle the lemon-herb dressing over the bowls just before serving.
