Ingredients
- 150g millet, rinsed
- 750ml vegetable broth or water
- 250g cremini mushrooms, sliced
- 100g kale, stems removed and chopped
- 1 medium onion, finely chopped
- 2 cloves garlic, minced
- 30ml olive oil
- 1 lemon, for juice
- 1 tsp fresh thyme, chopped
- Salt and freshly ground black pepper to taste
Instructions
- 1.In a medium pot, heat 15ml of olive oil over medium heat. Add the chopped onion and cook for 3-4 minutes until softened. Add the minced garlic and thyme, cooking for another minute until fragrant.
- 2.Add the rinsed millet to the pot and toast for 1-2 minutes, stirring constantly. Pour in the vegetable broth, bring to a boil, then reduce the heat to low, cover, and simmer for 20-25 minutes until the millet is tender and all liquid is absorbed.
- 3.While the millet cooks, heat the remaining 15ml of olive oil in a large skillet over medium-high heat. Add the sliced mushrooms and cook for 5-7 minutes until they are golden brown and have released their liquid.
- 4.Add the chopped kale to the skillet with the mushrooms. Cook for 2-3 minutes until the kale is wilted and vibrant green. Season with a pinch of salt and pepper.
- 5.Once the millet is cooked, fluff it with a fork. Stir in the sautéed mushrooms, kale, and the juice of half a lemon.
- 6.Taste and adjust the seasoning with more salt, pepper, or lemon juice as needed. Serve warm for a nourishing meal.
