Ingredients
- 400g sweet potato, peeled and cubed
- 240g cooked black beans, rinsed and drained
- 70g rolled oats
- 1 small onion, finely chopped
- 2 cloves garlic, minced
- 1 teaspoon ground cumin
- 1 teaspoon smoked paprika
- 30g tahini
- 1 tablespoon lemon juice
- 15g fresh parsley, chopped
- 1 tablespoon olive oil
- Salt and black pepper to taste
Instructions
- 1.Steam or boil the sweet potato cubes for 15-20 minutes until very tender. Drain well and mash thoroughly in a large bowl.
- 2.Add the drained black beans to the bowl and roughly mash them with a fork, leaving some texture. Stir in the chopped onion, minced garlic, rolled oats, cumin, smoked paprika, salt, and pepper.
- 3.Mix until well combined and form the mixture into 4-6 equal-sized patties. If the mixture is too sticky, add a little more oats.
- 4.Heat the olive oil in a large non-stick skillet over medium heat. Carefully place the patties in the skillet and cook for 4-5 minutes per side, until golden brown and firm.
- 5.While the patties cook, prepare the sauce. In a small bowl, whisk together the tahini, lemon juice, chopped parsley, and 2-3 tablespoons of water until you reach a smooth, drizzly consistency. Season with salt.
- 6.Serve the warm patties immediately, drizzled with the herbed tahini sauce, alongside a fresh green salad.
