Herbed Black Rice with Roasted Parsnips & Carrots

Ingredients
- 150g black rice
- 2 large carrots (approx. 250g)
- 2 medium parsnips (approx. 250g)
- 30ml olive oil
- 350ml vegetable broth
- 2 cloves garlic
- 1 small onion
- 15g fresh parsley, chopped
- 10g fresh dill, chopped
- Juice of 1/2 lemon
- Salt and black pepper to taste
Instructions
- 1.Preheat your oven to 200°C. Peel and chop the carrots and parsnips into 2cm chunks. Toss them on a baking tray with half the olive oil, salt, and pepper.
- 2.Roast the vegetables for 25-30 minutes, turning halfway, until they are tender and caramelized at the edges.
- 3.While the vegetables are roasting, rinse the black rice thoroughly under cold water. Finely chop the onion and mince the garlic.
- 4.In a medium pot, heat the remaining olive oil over medium heat. Add the onion and garlic, and sauté for 2-3 minutes until softened and fragrant.
- 5.Add the rinsed black rice to the pot and stir for one minute to toast the grains. Pour in the vegetable broth, bring to a boil, then reduce the heat to low, cover tightly, and let it simmer for about 30 minutes.
- 6.Once all the liquid is absorbed and the rice is tender, remove from heat and let it stand, covered, for 5 minutes. Then, fluff the rice with a fork.
- 7.In a large bowl, combine the fluffed black rice, the roasted root vegetables, the chopped parsley and dill, and the lemon juice. Mix well, taste, and adjust seasoning with salt and pepper if needed. Serve warm.
